Instructions
Preheat your oven: Set it to 220°C (425°F) and place your pizza stone or tray inside to heat up.
Prepare the base: Spread the ricotta evenly over the whole wheat crust, giving the pizza a creamy, rich foundation.
Sauté the spinach: Heat olive oil in a pan over medium heat, then sauté the garlic for 30 seconds. Add the spinach and cook until wilted. Season with salt and pepper.
Assemble the pizza: Spread the sautéed spinach evenly over the ricotta. Place the slices of red onion on top, and then layer the smoked salmon over them. Sprinkle with mozzarella to bring it all together.
Bake: Carefully transfer the pizza onto the preheated stone or tray. Bake for 10-12 minutes, or until the cheese is melted and the crust turns golden brown.
Finish and serve: Remove from the oven, let it rest for a couple of minutes, then garnish with fresh dill and capers. Serve with lemon wedges for a refreshing twist.
Notes
For an extra punch of flavor, drizzle a little olive oil over the pizza before serving, or sprinkle some red pepper flakes for a touch of heat.
